Mr P clearly spent 4 days living the dream,but I think he actually spent 4 days building up his stocks of mantestosteroneROAR because he kept asking me THE question.
You know, THE question.
The one with the little wink attached.
The question about barbecuing.
I don’t know what it is about men and fire and slabs of meat, but they get very excited.
So this is how I cooked mine.
It got Mr P very excited.
And it also tasted pretty good.
Winning all round, I reckon.
Go to an Italian butchers shop.
Enjoy the hot Italian man behind the counter wiggling his eyebrows at you, then manage to negotiate so e spatchcocked chicken off him.
Break up two heads of garlic into cloves.
Crush the garlic.
Take the loose bits of skin off.
And put in a bowl with the chicken.
Add salt and pepper.
And more than a glug of olive oil.
Marinade for a good hour or two.
Not a bad hour or two.
A good hour or two.
Get Mr P to create fire and get excited.
Or any person to create fire.
Or. you know, preheat the oven.
Put the chicken on a rack above the coals.
Tuning often, and basting with the leftover oil.
Serve, with salad and mayonnaise and a VERY excited husband.
BBQ Garlic Chicken
Serves 4-6. Cooking time 2 hours
2 small spatchcocked chickens
100ml olive oil
2 heads garlic
Salt and pepper
1. Separate the garlic into cloves, squash and peel.
2. Put the garlic, chicken and some salt and pepper in a bowl, then cover and leave to marinade for 1-2 hours.
3. Light the BBQ or preheat the oven to 180 degrees.
4. Cook the chicken for 15 minutes each side, turning often. (Or bake for 45 minutes)
